We eat a lot of chicken, mostly breasts, because I am not a
fan of dark meat. But I hate how it’s so
easy for it to dry out when you bake it. I got the idea when we were staying with
my parents one weekend. My dad always bakes his chicken in a broiler pan and
puts oil in the bottom. I thought to myself, hmmmm I wonder what would happen
if I put chicken broth in the bottom instead of oil?! So once we got home I tried
it, and omg it was the best chicken breasts I had ever had! The broth, like
steams and helps keep the chicken so moist! Below I am posting lemon pepper
chicken, but I use this method no matter what flavor of chicken breast I am making!
I have always been a fan of lemon pepper chicken, and I have
tried a ton of different brands of seasoning but buffalo wild wings lemon
pepper seasoning takes the cake! It has so much flavor, and my kids love it!
(all but Kimber but that’s another story, for another day)
First you poor the chicken stock/broth in the bottom of your
broiler pan, then add the top and spray with nonstick spray.
After you season your chicken on both sides, put in the pan
and then squeeze the juice of one lemon onto the chicken! Then you are ready
for the oven. Bake at 375 for about 40 minutes. it is the yummiest chicken you will eat!
